Usually a dry nose does not indicate a dog is sick, however if the nose has become scaly and flakiness this can indicate illness. If your dogs are otherwise healthy this might just be something you mention on their next vet appointment, otherwise you might want to find the reason for the flakiness.

Is he having regular bowel movements, if not it could mean that he has eaten something an the object could be lodged in his intestines. A dogs' nose can change colors for a variety of different reasons. They could have an autoimmune disease, changes in hormones or enzyme levels, changes in seasons, skin conditions, trauma. There are a variety of different reasons for these general symptoms, the best way to find the cause is to have your dog examines by a veterinarian.

Individual cases of dogs surviving distemper will have different recovery stories. Some dogs will die, live with no complications, or live with complications. Distemper can cause discoloration in the nose, it can also cause what is called "hard pad" in dogs who have recovered. These are both non life threatening symptoms. The real concerns would be if your dog has developed any damage to the nervous symptoms causes things like seizures or trouble with motor functions, it seems like the changes your dog has experienced are not harmful to his health. If you notice other symptoms over time it would be good to be proactive about seeking medical treatment.

Dry noses don't necessarily mean they are sick, this is an "old wives tale". If the crusting on his nose is not just dirt buildup that can be an issue of health. Are his ears full of dark build up? If so he may have an ear or yeast infection. This can be easily taken care of by getting ear wash and drops from your veterinarian. Usually a yeast infection will require drops rather than over the counter ear cleaner they sell at pet stores. It seems to me you're doing a great job, it's always wonderful to hear from others who care about animals the right way. Best wishes.

If you think this is a serious illness it's smart to bring him in to a veterinarian right away, breathing troubles are and can be life threatening symptoms. If you think these are symptoms from being overweight putting him on a restricted diet is the best options for him. Dog can get depressed, if he's is acting this way he may benefits with weight at depression by getting a walk in some nice sunlight. Just as humans needs sunlight for healthy bones and to ward off depression, so do dogs.

Is your dog still drinking or otherwise acting differently. This is a concern because it's been going on for so long. Have you tried offering a different food? Have you checked to make sure he hasn't gotten into anything harmful like poison or eating something he shouldn't have (shoe, etc.) These could all be causes some requiring medical attention.

Dry noses in dogs does not indicate sickness, if your dog is otherwise feeling and acting normal there should be not cause for alarm. A dog may have a wet or dry nose as long as it is not changes in color or texture, peeling or flaking, it is considered normal.

These are relatively general symptoms for dogs. Since this has been going on for a week it's in your best interest to visit a veterinarian. It may also been a good idea to keep an eye on his drinking habits. If he becomes dehydrated it could become a serious problem.

A common reason for dry nose and itchy ears are simply allergies. Try washing your dog with hypoallergenic shampoo and keeping him out of heavy wooded or grassy areas.
If you're seeing a build up of dark wax it could mean your dog has a yeast infection in which case they will require some medicated ear drops to kill the infection. If you're not seeing this buildup your dog could still have an ear infection.
